Bache Gabrielsen’s facility has several larger stainless steel fermentation tanks that are used to ferment the harvested grapes before distillation. The grapes are pressed for their nectar and then placed in tanks such as these to ferment. The fermentation process is complete in a matter of a few weeks. Then the nectar is distilled twice to produce eau-de-vie.
